This recipe is for our delicious vegan rainbow meringue. They are perfect for kids birthday parties, lunches and snacks. Adults and kids will absoloutely love these.
This recipe takes about 1 hour and 45 minutes to prepare and cook.
Makes 24 Meringues
Ingredients
Meringue Mix
20g My Ey (Vegan Egg White Substitute)
100 ml water
Pinch of salt
1 cup castor sugar
1 teaspoon vanilla extract
Food colouring
Cooking Instructions
1. Pre heat oven to 100C. Line 2 baking trays with baking paper.
2. Place My Ey, water and salt in a large mixing bowl and whisk until stiff peaks hold and meringue does not slide out when bowl is turned upside.
3. Gradually add in sugar and vanilla.
4. Increase speed and whisk until sugar is fully dissolved. Mixture should be free from grit when rubbed between two fingers and the meringue holds stiff and is glossy.
5. Paint the inside of a piping bag with food colouring.
6. Fill piping bag with meringue. Pipe meringues to your desired shape and size and 3cm apart on baking trays.
7. Bake meringues for 90 minutes or until meringue easily peels away from baking paper.
